Peach, Prosciutto & Mozzarella Salad with Jukes 8

This beautiful-looking, evocative summer salad works wonderfully with Jukes 8 served with chilled still or sparkling water. 

Ingredients (Serves 4)

4 fresh, ripe Peaches

2 balls of Buffalo Mozzarella

16 slices of the best Prosciutto you can find

1 tablespoon runny Honey

Juice and zest from 1 Lemon 

5 tablespoons of Extra Virgin Olive Oil

Freshly picked leaves from a few sprigs of fresh thyme

Cracked Black Pepper

Sea Salt

Method

Make the dressing by whisking together the honey, lemon juice, lemon zest and extra virgin olive oil. Season to taste with fresh, cracked pepper and sea salt. Assemble the salad by tearing (as opposed to slicing) apart the peaches and laying them on a serving dish. Scatter torn mozzarella and strips of prosciutto, and then add the dressing with a light scattering of thyme leaves.
